Tomato Soup Chicken

This incredibly simple dish is surprisingly good. It must be all the long hours that the chicken slowly cooks!

Ingredients

1 frozen chicken pieces

1 can tomato soup

Directions

Dump one package of frozen chicken pieces into a crockpot. Add one can of tomato soup. Cook on high for 6 1/2 hours.

Sun-Dried Tomato Bites

I’ve always thought celebrity cookbooks are kind of cheesy, so even though I’ve owned Florence Henderson’s Short-Cut Cooking for years, I’ve never used it. When I finally made her Sun-Dried Tomato Bites this weekend, I was amazed at how good they were. These little appetizers are full of tangy and tasty goodness. Definitely recommended!

Here’s my version of the recipe. As usual I’ve made quite a few changes to suit my own tastes.

Ingredients

1 cup sun-dried tomatoes (packed in oil)

2-3 garlic cloves

1 cup olive oil

1/2 small bottle capers, rinsed and drained

1/2 cup Parmesan cheese

2 loaves french bread, sliced into 1/2 inch slices and lightly toasted

Directions

In a medium bowl, mix together all ingredients but the bread. Use a hand blender to chop till coarse mixture is formed. Spread over toasted bread and serve immediately.
