Just Wonderful! Split Pea Soup

I got this recipe from a neighbor in Baltimore. I’ve made it for years and it comes out delicious each and every time.

Ingredients:

     1 lb. dried split peas

    1/2 cup barley

    2 tsp. Old Bay Seasoning

    1 carrot, diced

    1 onion, diced

    1 potato, diced

    2 tsp salt

    1/2 tsp pepper

    1/4 stick butter or margarine

Directions:

Fill a large pot half full of water and cook over high flame. When boiling, add all ingredients and cook for 20 minutes. At that point, reduce heat and  start stirring and checking soup every 5-10 minutes, till done. Add more water if necessary.

Sweet Challah Kugel

Sweet Challah Kugel is an economical and delicious way to use up leftover pieces of bread. Feel free to substitute white bread, cinnamon bread, raisin bread or rolls for the challah.

Ingredients:

     1 medium day-old challah, torn into small pieces

    1 1/2 cups sugar

    1 tsp. lemon juice

    5-6 eggs

    choice of peaches,  pineapple, bananas, apples, raisins, etc.

Directions:

In large bowl, soak challah in water for two minutes. Drain well. Add sugar, lemon juice, eggs and fruit and combine thoroughly. Bake in two greased pie pans for 30 minutes, covered. Uncover pans and bake for an additional 15 minutes.

Optional: A small amount of cinnamon can be added to ingredients before mixing.
