Quick Drop Biscuits
I’ve been making these biscuits for years. The recipe came from my old copy of Joy Of Cooking – the one I got 25 years ago when I first got married! Over the years I’ve begun adding cheese and hot pepper flakes to to make the biscuits a little more special.
Ingredients
2 cups all-purpose flour
3 tsp. double acting baking powder
1 tsp. salt
1/3 cup vegetable oil
2/3 cup milk or water
1 cup shredded cheese (optional)
1 tsp. red pepper flakes (optional)
Directions
Preheat oven to 475 degrees. Sift together flour, baking powder and salt. Pour in milk/water and oil. Stir with fork until mixture readily leaves the sides of the bowl. Add the cheese and red pepper flakes and stir for another 10 seconds. Drop onto an ungreased baking sheet. Bake 10-12 minutes.
Note: Be sure to measure your ingredients exactly, or the biscuits will not turn out well.
Italian Cheese Sub
I’ve been making variations of this sandwich for years. Don’t have capers? Fine. Have extra lettuce? Fine again. Almost anything goes in this delicious sandwich.
Ingredients
1 long, very fresh sub roll
1/3 cup Ken’s Zesty Italian Salad Dressing
1/3 cup mayonnaise
several slices good quality cheese
1-2 cups vegetables including lettuce, thinly sliced tomatoes, thinly sliced onions, olives, capers, chopped green peppers, chopped pickles.
Directions
Combine the salad dressing and mayonnaise. Slather both sides of the sub roll with a thick coating. Layer the cheese and vegetables. Serve immediately.
