A good, plain coleslaw that’s very easy to make. Delicious on veggie burgers!

Ingredients:

1 bag shredded cabbage

1 tsp. salt

1/4 cup mayonnaise

1/4 cup vinegar

1/4 cup sugar

Direction:

Combine all ingredients and serve. Can be refrigerated for several days.

Note: Red wine vinegar works very well.

Easiest Grilled Cheese Sandwichsource: Patrick

I got the idea for this basic recipe from Allrecipes.com. The original was titled Awesome Grilled Cheese Sandwiches, in case you’d like to look it up.

Ingredients

bread, 4 slices per person

margarine or butter

any kind of sliced or grated cheese (american, cheddar, etc.)

Procedure

Preheat oven to 450 degrees. Butter one side of each slice of bread. Place half the bread slices butter side down on a non-stick cookie pan. Place cheese on each slice of bread. Cover cheese with a second slice of bread, butter side facing out. Bake for six minutes, turn and bake six more minutes or till medium brown. Delicious!

Variations

Easiest Grilled Cheese Sandwich with Tomatoes: Add several thin tomato slices to your sandwich before cooking it.

Easiest Grilled Cheese Sandwich with Onion: Fry several thin slices of onion. Add to your sandwich before cooking it.

Easiest Grilled Cheese Sandwich with Apples: Add several thin apples slices to sandwich before cooking it.

I made some orzo as an almost midnight snack the other day. It had a very delicate, toasted flavor which I loved. It was so cheap and good I decided to pass on the recipe.

Ingredients

2 cups orzo

2 – 3 tbsp. butter or margarine

1 tsp. chicken bouillon (parve or vegan)

salt, to taste

small pinch pepper

Directions

Melt the butter in a large frying pan. Add the orzo and cook till light brown. Add three cups of water, bouillon, salt and pepper. Stir well. When the water begins to cook out, add another 1/4 cup of water. Continue adding water until the orzo is done to your liking.

Variations

Easy Orzo with Cheese: Stir 1/4 cup parmesan into the orzo when done cooking.

Easy Orzo with Peas: Add 1/4 cup frozen peas to the orzo after toasting.

Easy Orzo with Garlic or Onion: I usually add a pinch or two of garlic or onion powder to my orzo right after adding the water.

Easy Stir-Fried Vegetablessource: Serenae

This is the best tasting and easiest way that I know of to make stir-fried vegetables.

Ingredients:

     2 – 3 cups frozen broccoli, onions and pepper mix

     1 beef or chicken bouillon cube

     2/3 cup water

     1 1/2 tbsp. soy sauce

     1/2 tsp. salt

     1/2 tsp. sugar

     2 tbsp. oil

     ginger, to taste

Directions:

Place frozen vegetables and 2 tbsp. water into a large pan. Stir-fry for 5-7 minutes. Add sauce and serve.

To make sauce: Combine bouillon cube, 2/3 cup water, soy sauce, sugar, salt and oil in a small pan.  Add ginger to taste.  Heat until bouillon cube is dissolved.

Easy Stir-Fried Vegetables Variation 1:  Substitute a mix of green, red and yellow peppers plus a chopped onion for the other vegetables.

Easy Stir-Fried Vegetables Variation 2:  Add some cooked and sliced meat or chicken right before the end.  Cook long enough to heat through.

Easy Stir-Fried Vegetables Variation 3: This dish is usually served over rice.  Other good choices for bases are pasta, orzo, or couscous.

5 Easy Whole-Meal Sandwichessource: Cambridge Brewing Co.

We make a lot of sandwiches over at our house. They’re fast, easy and we eat them when we don’t have time to make a “real” meal. Sandwiches are our version of convenience food.

Here are some of my favorite sandwich ideas:

Powerhouse – Toast an onion bagel. Slather on nice mustard, nice cheese, lettuce, tomato and bean sprouts.

Bagel with Cream Cheese and Veggies – Spread cream cheese on a bagel. Top with slices of onion, tomato, cucumber and green pepper.

Veggie Burger – Prepare veggie burger according to package directions. Serve on bagel with onion, lettuce, tomato, pickle and green pepper slices. Optional: mayo, mustard, ketchup, cheese.

Pizza Something – Place pizza sauce and shredded cheese on a bagel, pita or sub roll. Bake until cheese is melted.

Cheese Italian Sub – Wrap a sub roll in foil and heat up in oven. When warm, spread with lots of mayonnaise and Italian dressing. Layer with tomatoes, onions, chopped olives, thinly sliced green pepper and chopped pickles. Top with slices of good cheese.

Flat Bread Pizzasource: framboise

Ingredients:

Flat bread (I made mine with focaccia but pita might also be nice)

1 tomato

shredded cheese

oregano

Procedure:

Slice the tomato into thin slices and lay on flat bread. Sprinkle with cheese and oregano. Cook in 375 degree oven until cheese is melted.

Serves 1

I got this recipe from an neighbor back in Baltimore

Ingredients:

1 package chicken pieces

1/2 can of frozen orange juice

1/2 cup water

1 package onion soup mix

Procedure:

Place chicken pieces in a large baking pan. Combine orange juice and onion soup mix. Pour over chicken. Cover and bake at 350 degrees till done, basting twice.
