I first tasted this delicious and healthy snack in the central bus station in Jerusalem. Since then, I found that Nava Atlas has almost the exact recipe in Vegetarian 5-Ingredient Gourmet.

Ingredients:

2 cups of mixed coarsely chopped fruit

4-6 ounces of vanilla yogurt

good quality granola

Directions:

Place the fruit in a bowl. Top with yogurt and then granola.

Frozen Banana Dessert

This instant, no-work dessert has both the taste and texture of rich banana ice cream.

Ingredients:

Bananas ( 1 per person)

Direction::

Peel bananas. Wrap in foil or plastic wrap. Place in freezer till hard. To eat, hold in hand and enjoy as you would a regular banana.

I love noodle kugel but I usually try to avoid it due to the high fat content. This recipe substitutes applesauce for the fat and the kugel still tastes delicious.

Ingredients

1 package flat wide noodles, cooked al dente and well drained

2 snack size containers unsweetened apple sauce

4 eggs

1/2 cup raisins

1 cup dark brown sugar

2 tart green apples, coursely diced

1/2 teaspoon salt

Directions

Spray two small pans with Pam. Combine all ingredients.

Bake uncovered, in 180 degree oven, till golden brown.

Variation: To make the kugel tastier (but less healthy) add 1/2 cup melted margarine before baking.

Broccoli Fried Rice

Broccoli Fried Rice doesn’t taste exactly like what you’d find in  a Chinese restaurant, but it’s very tasty. Plus, if the rice is already cooked, the dish can be prepared in less than ten minutes. Faster than takeout!

Note: You will need a large, high quality, non-stick frying pan to make the Broccoli Fried Rice.

Ingredients

1 1/2 – 2 cups day old onion-flavored brown rice

1 1/2 cups frozen broccoli heads

1 medium onion

1 egg

2 tablespoons neutral-tasting oil

soy sauce (to taste)

salt (to taste)

Directions

Slice the onion in half. Cut each half into diagonal strips.  Stir fry the onion on a high flame, in a large non-stick pan, in 1 tablespoon oil, till lightly browned.

In the meanwhile, place the broccoli into an microwave safe dish and cook for 2 1/2  minutes on high. Allow to cool for 1 minute and then gently  squeeze out excess moisture. Use a paper towel to mop up additional moisture. Don’t worry if the broccoli is still slightly damp. Divide  each head of broccoli into 3 mini heads.

Add broccoli to pan and cook with onions for another minute or two.

Break the egg into a cup and stir till blended.  Push vegetables to one side of pan and add egg. Cook till egg is set.

Remove the vegetables and cooked egg from the pan.

Add the remaining oil and cook cold rice till hot. Add vegetables and egg mixture and cook for another minute to combine flavors.

Add soy sauce and additional salt to taste.

To make onion-flavored rice: Make like usual, but add salt and onion soup mix to the boiling water, before adding the rice.

Note: Rice must be cold and day old or it will stick to the frying pan.

Though I love popcorn with butter drizzled over it, our family is now on a diet, and that’s verboten for us. Instead, we enjoy a very tasty homemade popcorn that relies on heavy seasoning instead of fat for taste. It’s yummy and good for our weight! What could be better?

Ingredients

1/2-1 cup popcorn

Pam butter flavor spray

Lawry’s Seasoned Salt

Directions

Cook the popcorn in a hot air popcorn popper according to the manufacturer’s instructions.

Place in a large bowl or pot with a tight lid.

Spray the popcorn with a short spritz of Pam, sprinkle with several shakes of Lawry’s Seasoned Salt and shake well to distribute. Repeat till the popcorn is seasoned to taste.

The popcorn can be made several hours prior to eating.

Spicy Indian-Style Tomato Sauce

This Spicy Indian-Style Tomato Sauce makes a nice change of pace from my usual Italian sauces.

There are a lot of things you can do with this versatile sauce. It can be served with omelets or scrambled eggs, poured over rice, mixed with peas, and spooned onto cooked potatoes.

Ingredients

14 oz crushed tomatoes
3 oz tomato paste
1 cup water
1 tsp cumin
1 tsp chili powder
1 tsp turmeric
salt to taste

Directions

Combine all ingredients but salt, in a large pot. Bring sauce to boil,  lower flame, and cook, stirring occasionally till until desired thickness is reached. Add additional water if needed. When sauce is finished, add salt to taste.

Healthy Tomato SaladOnly use the highest quality vegetables in this salad. Because the salad uses so little dressing, you barely taste it. Instead, you really taste each bite of vegetable.

Ingredients

1 cup finely chopped ripe tomatoes

1 cup finely chopped cucumbers

1 cup finely chopped pickles

2 -3 tbsp Italian Salad Dressing

salt to taste

Directions

Combine all vegetables.

Serve within two hours or salad will start to wilt.
