Very Versatile Vegetarian Salad Wraps

These wraps are very versatile.

Try them with either honey mustard dressing, cream cheese, guacamole, techina (sesame paste dressing) or hummus (chickpea dressing) as the spread.

Or, if you don’t care for cabbage, carrots, and lettuce, feel free to choose your own veggies. Raw spinach, olives, tomatoes, red peppers and cucumbers are also good choices.

You can even add a little egg salad or cheese if you need a bit of protein.

Ingredients

4 flour tortillas

dressing or spread of your choice

1/2 grated carrots

1/2 grated cabbage

4 lettuce leaves, washed and dried

1-2 tablespoon lemon juice

1-2 tablespoon olive oil

salt and pepper, to taste

Directions

Combine carrots, cabbage, lemon juice, olive oil, salt and pepper. Use more or less olive oil and lemon juice, depending on how tangy a sandwich you are going for. Set aside.

Spread tortilla with dressing or spread.

Spoon half of carrot/cabbage mixture onto center of tortilla. Add one or two leaves of lettuce. Do not overstuff.

Roll up tortilla and eat immediately.

Makes 4 sandwich size wraps.

Hearty Now And Tomorrow Soupsource: Jeremy Keith

I put this very healthy soup on to cook on Friday afternoons and then eat from it for the next 24 hours. It’s full of lentils, barley and yummy vegetables. By the way, this recipe makes a LOT of soup.

Ingredients

3 cups lentils
1 cup barley
2 onions, chopped
2/3 cup carrots
4 cups chopped tomatoes (canned are fine)
2 small containers tomato puree
2 – 4 tbsp. olive oil
1 tsp. dried oregano
2 large pinches pepper
4 tsp. salt
20+ cups of water
onion soup mix, to taste

Directions

Place all ingredients, except for onion soup mix, in a large pot. Cover most of the way. Stirring occasionally and adding more water if needed, cook till soup is tender, but still firm when eaten. Add onion soup mix to taste and cook for 5 more minutes. Enjoy soup immediately.

Place leftover soup in a crock pot on a low setting, to be eaten over the next 24 hours. You will need to add additional water before eating, or soup will be slightly too strong.

Amazingly Easy Three Ingredient Noodle Soupsource: Liza Lagman Sperl

This soup is surprisingly good because the soy sauce adds a rich taste to the plain bouillon.

Ingredients

vegan chicken bouillon powder

soy sauce, to taste

noodles

Directions

Make up two quarts of  bouillon, as per instructions on the package. Bring to a rolling boil. Add several tablespoons of soy sauce, to taste.

Boil 1/2 lb. noodles in the bouillon till tender. Ladle into individual bowls.

Note: Serve immediately, or the noodles will absorb excess liquid and become mushy.

This chili is HOT. If you need a milder chili, add more beans or eating the chili over rice.

Ingredients

1 tbsp olive oil

1/2 large red onion, chopped

1/2 green pepper, chopped

1 can (undrained) chili beans (vegan/parve)

1 17 oz can (undrained) chopped tomatoes

1 cup cashews, whole or halved

1 tsp chili powder

1/2 tsp ground cumin

1/4 tsp red pepper flakes

1 tsp sweet paprika

1/2 tsp onion powder

1/4 tsp garlic powder

1 1/4 tsp salt

1/4 tsp pepper

Directions

Saute the onions in oil for 2 minutes. Add the green pepper and saute for another 2 minutes.

Add the rest of the ingredients.

Simmer, uncovered,  till most of the liquid cooks out.

Serve immediately or refrigerate for several days.

I created this delicious main course salad one day when I didn’t feel like making rice or spaghetti to go with my chili. It tastes just like a Taco Salad I once ate in a restaurant.

Ingredients

Easy, Easy Vegetarian Chili

tortilla chips

lettuce

sour cream

shredded cheese

mild salsa

Procedure

In a large plate stack chips, chili, lettuce, sour cream and shredded cheese. Top with salsa.

Variations

Taco Salad with Tomatoes: Add chopped tomatoes to the lettuce.

Taco Salad with the Garden: Add chopped tomatoes, chopped green onions, chopped green olives and chopped green peppers to the lettuce.

Hot, Hot, Hot Taco Salad: Skip the sour cream and use hot salsa instead of mild.

This recipe for Vegetarian Nachos is super easy and super delicious. Once you taste these, you are going to want to make them all the time.

Ingredients:

tortilla chips

salsa

shredded mozzarella cheese

Directions:

Place a single layer of chips on a microwavable plate (there can be a slight amount of overlap). Sprinkle lightly with salsa. Sprinkle lightly with cheese. Microwave on high for 40 to 80 seconds, depending on the strength of your microwave.

Vegetarian Nacho Variations

Vegetarian Nachos with Onion and Olives: Sprinkle chips with finely chopped onions and olives before adding other ingredients

Vegetarian Nachos with Chili Beans: Mix a can of drained chili beans into the salsa before sprinkling onto chips.

Vegetarian Nachos with Other Cheeses: Substitute shredded cheddar or american cheese for the mozzarella, if none is available.

Easy, Easy Vegetarian Chili With Variationssource: Kelly Garbato

This delicious recipe is based on a chili I found in a Chatelaine Food Express cookbook called Quickies. But, after changing six out of ten ingredients, plus adding variations, I feel comfortable adopting it as my own.

Ingredient:

28 ounce can chopped tomatoes, undrained

2 can of chili beans, undrained

1/4 envelope onion soup mix

1 teaspoon garlic powder

1 tablespoon chili powder

1 teaspoon cumin

1/2 dried oregano

1/2 teaspoon salt

pinch black pepper

Procedure:

Combine all ingredients in a large pot. Simmer for 15 minutes, stirring frequently.

Variations

Easy, Easy Vegetarian Chili with Veggies: Add chopped and fried onion and green pepper before simmering.

Easy, Easy Vegetarian Chili with Toppings: Top with choice of shredded cheese, sour cream, green onions, olives, chopped tomatoes, etc.

Easy, Easy Vegetarian Chili with Rice or Spaghetti: Spoon chili over rice or spaghetti before serving.
