5-Minute Vegetarian Taco Salad

This is the per­fect  week­day  rec­ipe… it’s quick, all in one, nut­rit­ious, and tas­ty.  Plus, it’s veg­et­ar­ian!


2 cups tortilla chips

1/2 can chili beans

1/3 cup salsa

1/2 cup shredded cheese

1 1/2 cup shredded lettuce (bag salad is fine)

1/2 tomato, diced


Layer tortilla chips, beans, 1/4 cup salsa and cheese on a large microwavable plate.

Microwave for two minutes or till cheese is melted and beans are hot.

Sprinkle on shredded lettuce, diced tomatoes and more salsa if desired.

Serve immediately.

Makes two main course meals or 4 side dishes.
