5-Minute Vegetarian Taco Salad

This is the perfect weekday recipe… it’s quick, all in one, nutritious, and tasty. Plus, it’s vegetarian!
2 cups tortilla chips
1/2 can chili beans
1/3 cup salsa
1/2 cup shredded cheese
1 1/2 cup shredded lettuce (bag salad is fine)
1/2 tomato, diced
Layer tortilla chips, beans, 1/4 cup salsa and cheese on a large microwavable plate.
Microwave for two minutes or till cheese is melted and beans are hot.
Sprinkle on shredded lettuce, diced tomatoes and more salsa if desired.
Makes two main course meals or 4 side dishes.
