Balsamic Vinegar Potato Salad 2
This is my second recipe for Balsamic Vinegar Potato Salad. The first recipe was very good, but this one is even better.
Vaguely based on The Original Potato Salad recipe by Hellmann’s, but I substituted balsamic vinegar, added red onions and removed the celery and eggs. Yum!
5-6 medium potatoes, cut in equal size chunks
1 cup Hellmann’s mayonnaise
2/3 cup chopped red onion
2 slight tbsp balsamic vinegar
1 1/2 tsp salt
1/4 tsp pepper
1 tsp sugar
Cook the potatoes in boiling water till just tender. Rinse in cold running water to cool.
Add chopped onions.
In a large bowl mix all of the remaining ingredients, to make dressing. Spoon 2/3 of the dressing over the potatoes and gently stir to mix. If needed, add additional dressing. DO NOT OVERDRESS.
Add additional salt and pepper, to taste.
Cool before serving.
Note: Leftover dressing makes a delicious spread for hamburgers.
