Cottage Cheese Pancakes, Made Two Ways

Here is a recipe for cottage cheese pancakes, made two different ways. The main recipe is for a sweet pancake. The variation is for a savory, spinach version. Both are yummy.
1 cup cottage cheese
1 cup sour cream
1 cup flour (without lumps)
1/4 cup sugar
3 eggs, beaten well
1 tsp baking powder
1 Tbsp oil
1 tsp vanilla
1/4 tsp salt
Pam or other non-stick spray
In large bowl, combine all ingredients except for spray. Mix very well with fork.
Spray high quality, non-stick pan with Pam. Turn on flame to medium.
For each pancake spoon 1-2 Tbsp of mixture onto pan. Cook till edges begin to solidify.
Flip and continue to cook till pancakes are lightly brown on both sides.
You do not need syrup or additional sugar. The pancakes are sweet enough.
Spinach and Cheese Variation: Skip the sugar and vanilla. Instead, add 1/2 cup well drained cooked spinach, 1/2 cup shredded cheese and a general pinch of pepper to the mix. Cook like normal. Top each spinach cake with a tablespoon of warmed tomato sauce.
