Easy And Yummy Broccoli Kugel
This broccoli kugel recipe does not make a lot of servings. Since we are a tiny family, and I hate leftovers, I try to cook only small quantities. If you need a larger kugel, simply double the broccoli, add one more egg, an additional 1/3 cup mayonnaise and one more packet of onion soup mix. You will wind up with much more veggie dense kugel, but it will still be very good.
1 pound chopped broccoli (1/2 large bag)
2/3 cup mayonnaise
2 individual serving size envelopes onion soup mix
Preheat oven to 375.
Microwave broccoli for 5 minutes and drain. Combine with other ingredients in large bowl and stir well.
Spray small baking pan with Pam. Pour ingredients into pan. Bake, uncovered, till top of kugel is medium brown.
Variation: Prepare a pie shell according to package directions. Pour the broccoli mixture into the pie shell. Bake as usual.
