Easy, Easy Vegetarian Chili With Variationssource: Kelly Garbato

This delicious recipe is based on a chili I found in a Chatelaine Food Express cookbook called Quickies. But, after changing six out of ten ingredients, plus adding variations, I feel comfortable adopting it as my own.


28 ounce can chopped tomatoes, undrained

2 can of chili beans, undrained

1/4 envelope onion soup mix

1 teaspoon garlic powder

1 tablespoon chili powder

1 teaspoon cumin

1/2 dried oregano

1/2 teaspoon salt

pinch black pepper


Combine all ingredients in a large pot. Simmer for 15 minutes, stirring frequently.


Easy, Easy Vegetarian Chili with Veggies: Add chopped and fried onion and green pepper before simmering.

Easy, Easy Vegetarian Chili with Toppings: Top with choice of shredded cheese, sour cream, green onions, olives, chopped tomatoes, etc.

Easy, Easy Vegetarian Chili with Rice or Spaghetti: Spoon chili over rice or spaghetti before serving.
