Fireworks Cashew Chili (Vegan)source: postbear

This chili is HOT. If you need a milder chili, add more beans or eating the chili over rice.


1 tbsp olive oil

1/2 large red onion, chopped

1/2 green pepper, chopped

1 can (undrained) chili beans (vegan/parve)

1 17 oz can (undrained) chopped tomatoes

1 cup cashews, whole or halved

1 tsp chili powder

1/2 tsp ground cumin

1/4 tsp red pepper flakes

1 tsp sweet paprika

1/2 tsp onion powder

1/4 tsp garlic powder

1 1/4 tsp salt

1/4 tsp pepper


Saute the onions in oil for 2 minutes. Add the green pepper and saute for another 2 minutes.

Add the rest of the ingredients.

Simmer, uncovered,  till most of the liquid cooks out.

Serve immediately or refrigerate for several days.
