Great American Vegetarian By Nava Atlas

I’ve been a vegetarian for most of my life. I remember all the way back to my childhood, with my mom trying to force me to eat the imitation chicken and beef in a can. Or, trying to disguise undercooked TVP in a tomato sauce. Ugh.

Therefore, I can say with some confidence, that I’m an authority on vegetarian food. I may not be the best cook in the world, but I know what tastes good. And, more importantly, what to avoid.

The recipes in Great American Vegetarian are definitely in the “go-to” category. The dishes are easy, inexpensive (for the most part) and extremely tasty. Most important, at least for me, there is nothing “weird” in the book.

Instead, Nava Atlas has stuffed the book full of traditional American favorites. There’s Black Bean Soup, Potato Omelets,  Cornmeal Griddlecakes and a host of other Southern favorites (I guess my Maryland roots are showing!).

My pick?

I just adored the Jambalaya. If you already have a well-stocked spice and herb shelf (I do!) the ingredient list is not too long. And, the finished dish is very flavorful without being too exotic.
