Mock Chopped Liver

Mock Chopped Liver is based on a recipe invented by Doralee Patinkin Rubin. I made it for a group of women this past weekend, and everyone adored it.  It was so delicious, at least half the ladies there asked me for the recipe!

Ingredients :

     1/4 cup canola oil
     4 large onions, sliced 
     2 cups frozen string beans, microwaved till tender and drained
     1/2 cup frozen peas, microwaved till tender and drained
     4 hard-boiled eggs, peeled
     1/2 cup walnuts
     Salt and freshly ground pepper to taste

Directions :

Saute the onions in the oil for one hour. Combine all ingredients and process with hand blender or food processor till smooth but still slightly chunky.  Serve warm or cold with crackers or rye bread.

Note : I’ve made some very minor changes from Ms. Rubin’s recipe, based on what I happened to have in the house. However,  the recipe is still very much in the spirit of the original.
