O’Henry Bars

Posted on | November 5, 2008 | No Comments

I got this recipe from my daughter-in-law, who’s a wonderful baker. It’s incredibly delicious, but sometimes comes out a little too moist. If that happens to your bars, throw them in the freezer for a couple of hours; They taste just as good frozen.

Ingredients:

    4 cups slow cooking oatmeal

    1 cup brown sugar

    1 1/4 cups oil

    1/2 cup corn syrup

    3 tsp vanilla

    2 tbsp margarine

    6 tbsp peanut butter

    3 oz chocolate

Directions:

In a large bowl, mix together the upper list of ingredients. Grease a 9 x 13 or cookie sheet pan. Press in dough. Bake in preheated oven for exactly 12 minutes. It will look raw, but don’t put it back into the oven.

Melt 2 tbsp margarine. When fully melted, stir in peanut butter and then the chocolate, in that order.

Spread on slightly cooled bars, cool completely and enjoy.
