Pesto Pasta Salad
I made this delicious pasta salad a couple weeks ago for a family party. The kids in the group found this dish a little too sophisticated, but the adults loved it.
Ingredients
1 pound bow tie noodles
1 medium jar pesto sauce
1 package salty cheese or feta cheese
3 tablespoons onion, finely chopped
1/2 cup parmesan cheese
salt to taste
Directions
Cook the noodles only till firm. Drain immediately and rinse with cold water. Add the bottle of pesto sauce, chopped onions, parmesan and salt to taste. Dice the cheese into small squares and stir gently into noodles. Allow to chill for several hours before serving.
Update: I made the Pesto Pasta Salad again last and served it piping hot. It was equally delicious!!

You can use between 8 ounces and 16 ounces, depending on how cheesey (and pricey) you want the salad to be. BTW, I tried this with a few chopped green olives the other day, and it was also very good!
