Sun-Dried Tomato Bites

I’ve always thought celebrity cookbooks are kind of cheesy, so even though I’ve owned Florence Henderson’s Short-Cut Cooking for years, I’ve never used it. When I finally made her Sun-Dried Tomato Bites this weekend, I was amazed at how good they were. These little appetizers are full of tangy and tasty goodness. Definitely recommended!
Here’s my version of the recipe. As usual I’ve made quite a few changes to suit my own tastes.
Ingredients
1 cup sun-dried tomatoes (packed in oil)
2-3 garlic cloves
1 cup olive oil
1/2 small bottle capers, rinsed and drained
1/2 cup Parmesan cheese
2 loaves french bread, sliced into 1/2 inch slices and lightly toasted
Directions
In a medium bowl, mix together all ingredients but the bread. Use a hand blender to chop till coarse mixture is formed. Spread over toasted bread and serve immediately.

That does sound wonderful. I’ve been looking for ways to use dried tomatoes. Thanks for the idea!
