Sweet Applesauce Noodle Kugelsource: Meal Makeovers Moms

Recently,  I came across a very nice recipe for a sweet noodle kugel over at Yummly.  I tweaked the ingredients a bit (as usual), simplified the preparation a little,  and came up with something I like even better. The result is a yummy side dish,  that is quick and easy to throw together.

1 16 ounce package flat egg noodles, cooked and drained

1/2 cup mild tasting oil (I used canola)

1 1/2 cups applesauce

1/4 cup raisins

4 eggs ( don’t bother beating)

1 cup white sugar

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/2 teaspoon salt

Preheat over to 350 degrees.

Combine all ingredients in a large bowl and stir very well. Pour into non-stick or sprayed 9×13 pan or 2 large loaf pans. Bake for 55-60 minutes, uncovered, if you prefer a slightly crunchy top.  For a crunch-free top,  cover the kugel for part of the cooking time. Do not overcook.

Tastes great served at a variety of  temperatureshot, warm or room temperature.

Optional: Top with walnuts.
